Eat Like A Gilmore: Rocky Road Cookies

I ordered the Eat Like A Gilmore cook book earlier this month from Amazon and literally fell in love with so many of the recipes! I normally find that there's only a select few recipes that I'd use in most cook book.

The first bake off was the Rocky Road Cookies. However, as I'm not a fan of nuts, I didn't include the Peacan nuts as recommended in the recipe.

Ingredients

You will need the following:

125g Flour
150g Caster sugar
150g Brown sugar (light brown sugar works just the same)
230g Butter
1/2 tsp Salt
75g cocoa powder
1 tsp Vanilla/vanilla essence
2 large eggs
1tsp Bicarbonate of soda
One handful Chopped peacans
One packet of chocolate chips
1/3 packet of Marshmallows

Method

Preheat the oven to 180c.
Mix together the flour, bicarbonate of soda, cocoa powder, caster sugar, brown sugar, butter and the salt in a medium size mixing bowl.
Beat the eggs together with the vanilla essence before pouring into the mixture and whisking with an electric whisk.
Pour in the chocolate chips into the mixture and fold in using a wooden spoon.
Pour in roughly 1/3 packet of marshmallows (more or less, as you see fits) into the mixture and fold in.
Distribute the mixture onto your baking trays and cook for 10 - 12 minutes.

This recipes makes approximately 30 cookies, but that's entirely depends on the size you want your cookies to be.

I'm not even joking when I say these cookies were incredible! While the marshmallows can't be seen clearly, they give the cookies an added gooey-ness, more so when they're still warm!

All in all, I'm happy with the first recipe tried and tested from this book and I'm looking forward to my next attempt.

Charlotte.
